It’s fresh corn season and we are corn-ing it up here. Corn salsa, corn on the cob, sweet corn salad, corn kernels sneaked out of the the freezer bag right after I’d just sealed it. Ehm. Summer vacation five-year-old idle hands.
So we all try to limit the amount of food we eat that comes from a can, right? And frozen corn here is super-expensive. Enter fresh corn season and an abundance of beautiful yellow locally sourced produce. All you need is a knife, some boiling water, and freezer bags.
Directions:
Remove corn from its husks.
Bring a large pot of water to the boil and put the corn in. Make sure it’s submerged and boil for around ten minutes until it turns a bright yellow.
Remove the kernels like so.
Make sure they’re completely dry.
Put into freezer bags and freeze flat. After an hour in the freezer shake the bags a bit so the kernels don’t stick together.
…and voila! Fresh corn to cheer you up on those dark winter days.
