Honey Garlic Roasted Vegetables
Ingredients
  • 2 medium potatoes chopped into cubes
  • 1 large sweet potato chopped into cubes
  • 1 medium sized head of broccoli chopped into florets
  • 2 cups cherry tomatoes
  • 4 garlic cloves finely chopped
  • 1/4 cup olive oil
  • 2 Tablespoons honey
  • Salt and pepper to taste
  • Fresh rosemary and/or thyme sprigs can be replaced with dry Italian herb mix
Instructions
  1. Preheat oven to 220 C and line a large baking sheet with foil (you don’t have to, but it makes cleanup much easier). Spray it with oil and then add potatoes and sweet potatoes.
  2. Bake for 15-20 minutes and then take out the tray to add broccoli and tomatoes. Heat the oil gently in a small pan until barely hot. Add garlic, herbs, salt and pepper, and oil to vegetables and mix well. Drizzle with honey and bake for another 25-30 minutes or until potatoes and sweet potatoes are done.
  3. Serve with a side of turkey and gravy, then go take a nap. You’ve earned it.
