I’ve always loved Bounty bars. The combination of coconut and chocolate taste like childhood summers at my grandma’s house. And this healthier version of coconut bounty bars tastes exactly the same!
Let’s face it; the healthy-fied version of anything is often slightly (or not so slightly) different from the sinful, gooey original. These healthy bounty bars however, are every bit as authentic and addictive. They’re also super easy to make and a fun- albeit messy- “cooking” activity for the kids.
Four ingredients and one hour. That’s all you need.
Ingredients:
2 cups dessicated coconut
1/2 can coconut cream
3 TB honey
1 large bar dark chocolate
Directions:
1- Mix coconut, coconut cream (don’t shake the can because you’ll want to keep the cream and water separate since we’re using the creamy part only) and honey until mixture can be molded into bars.
2- Refrigerate coconut bars until firm.
3- Melt chocolate using a hot water bath.
4- Use a fork to dip coconut bars into melted chocolate until fully coated.
5- Put them on wax or parchment paper and leave them to harden at room temperature or in the fridge if it’s too hot.
