Lotus Cookie Butter

It’s never a good idea to have a huge jar of something that includes both cookie and butter in its name lying around.

But when it comes to cookies in general and Biscoff/Lotus/Speculoos in particular, it’s always worth the indulgence.

I don’t know who dreamed up the idea of turning a delicious cookie into a creamy, gooey spread that can be made into sandwiches, slathered on croissants or be used as an ingredient to make OTHER decadent desserts; but I love that human being from the bottom of my sweet-toothed heart.

This recipe can be used with all kinds of cookies. We’re talking peanut butter, chocolate chip, Oreos (but remove the white center first).

The sky’s the limit. And the appetite;-)

 

Recipe adapted from A Beautiful Mess

Ingredients:
2 cups cookie crumbs
4 tablespoons coconut oil or ½ stick of butter
1/2 cup sweetened condensed milk
1/4 cup evaporated milk
Water

Directions:

Gather your ingredients…

Pulse cookies in food processor until they turn into crumbs. Melt butter or coconut oil on gentle heat then add the condensed milk and evaporated milk. Mix all ingredients together except water. I put everything together here because I have no patience.

Note: Different cookies need different amounts of liquid. It’s a good idea to add the liquid bit by bit until you get the consistency you want which should be thick and creamy.

Refrigerate for a couple of hours then with a spoon, add small teaspoonfuls of water to the mixture and stir well to get a smoother consistency. Some people like it thick like peanut butter and others like it more loose and dippable. Take your pick.

It should keep around a week or more in the fridge. If it lasts that long that is.

⭐️ Honey Garlic Roasted Veggies⭐️
⁣
2 medium potatoes, chopped into cubes
1 large sweet potato, chopped into cubes
1 medium sized head of broccoli, chopped into florets
2 cups cherry tomatoes
4 garlic cloves, finely chopped
1/4 cup olive oil
2 Tablespoons honey
Salt and pepper, to taste
Fresh rosemary and/or thyme sprigs (can be replaced with dry Italian herb mix)

⭐️Directions⭐️
⁣
1- Preheat oven to 220 C and line a large baking sheet with foil (you don’t have to, but it makes cleanup much easier). Spray it with oil and then add potatoes and sweet potatoes.
2- Bake for 15-20 minutes and then take out the tray to add broccoli and tomatoes. Heat the oil gently in a small pan until barely hot. Add garlic, herbs, salt and pepper, and oil to vegetables and mix well. 
3- Drizzle with honey and bake for another 25-30 minutes or until potatoes and sweet potatoes are done.
4- Enjoy!

These colorful rainbow veggies buns are as fluffy and delicious as they are pretty to look at 🌈

⭐️ Rainbow Veggie Rolls⭐️
100 grams whole grain flour 
150 grams AP flour
175 grams (carrot juice or beet juice or spinach juice- you’ll need to repeat the same recipe with each and try to use a juicer)
1 TB honey 
1 tsp yeast 
1 dash salt 
1 TB olive oil 
⁣
⭐️Directions⭐️
1- Mix everything together and knead for ten minutes until a smooth ball forms. 
2- Let rise in a warm place covered until doubled in size.
3- Divide dough into tennis sized balls and arrange on a greased baking sheet with parchment.
4- Cover and let rise again until balls rise. 
5- Brush tops with maple syrup and add sesame seeds if you like. 
6- Bake in a pre heated 180 c oven until done (buns will sound hollow if you tap their bottoms).

⭐️Pink Caprese Mini Pizzas⭐️
100 grams whole grain flour
150 grams AP flour
175 grams beetroot purée 
1 TB honey 
1 tsp yeast 
1/2 tsp salt 
1 tsp olive oil 
Walnut pesto
Cherry tomatoes 
Fresh basil leaves
Mozzarella

⭐️Directions⭐️
1- Mix flour, beetroot purée, honey, salt yeast and olive oil. Knead for 7-10 minutes.
2- Cover ball of dough and let rise in a warm place for around 1-2 hours (it won’t double in size).
3- Refrigerate for an hour to make it easier to work with. 
4- Roll dough into a large circle around 2 mm thick. Use a cookie cutter to cut out smaller circles.
5- Pre-heat oven to 200 c and then arrange mini dough circles on a baking sheet lined with greased parchment paper. 
6- Top each pizza with walnut pesto, sliced cherry tomato and cheese.
7- Bake until crust is crispy and cheese has melted and garnish with fresh basil.
