Apple Pie Kunafa

Hi there! I’m..uh..back! Again. Hopefully, back back this time.

I really don’t want this to turn into a complaint fest akin to the type I have with my mother on the phone every morning, so suffice to say that life with six month old twins is…interesting. I don’t think I’ll be cooking much for the next three and a half years. Or eating. Or sleeping. Or brushing the bird’s nest-like frizz currently attached to my head.

But hey, it’s Ramadan! Food, food and more food is on everyone’s mind. And where there’s Ramadan food, kunafa is almost always there, in all its ooey, gooey calorie ridden glory. Although we all love the traditional syrupy one with all the nuts, sometimes it’s nice to try something a bit different. 2013 favourites include mango, Nutella and red velvet kunafas. Nice, huh?

While munching on a red velvet piece, it suddenly dawned on me that kunafa was just like pie; fruit, cream, nuts, almost anything sweet can be added to it and it would be incredibly yummy. Good news is, it’s much easier to make than pie but equally delicious.

Ready for my idea of the perfect dessert?

Apple. Cinnamon. Cream.

All the flavours of apple pie on a golden, crunchy, caramelly kunafa crust.

Ingredients:

Crust:
1 pound kunafa
1 cup corn oil (you can use melted butter)

Apple filling:
2 medium apples (I used sweet, firm apples)
1 cup water
1 Tblspn corn starch
2 tspns sugar
1/2 Tblspn cinnamon
1/2 tspn vanilla
Juice of one lime/lemon
Raisins (optional)

Cream:
1 cup milk
1 Tblspn corn starch
1/2 cup sugar
1 tspn vanilla

Caramel sauce:
1 cup sugar
1/2 cup water
1/2 cup warm milk
1/2 tspn vanilla

Directions:

Make your caramel first. Caramel is tricky. If you mess up more than three batches- and two pots, a spoon and possibly a finger- give up and just buy it ready made.

You’ll need a good, sturdy preferably stainless steel heavy bottomed pot. Don’t use teflon or your favourite, most expensive Hello Kitty short sided pan.

Put water. Add sugar. Stir gently on medium high heat with a wooden spoon until sugar dissovles. Then stop! DO NOT stir again. You could cover the pot and/or brush the sides of the pot to avoid crystalization of the sugar. Swirl mixture every now and then, again NO stirring.

Keep milk handy, you’ll need it soon.

As soon as mixture starts turning a rusty yellow, keep your eye on it and get ready to take it off the heat as soon as it turns light golden brown.

Make sure you wear an oven mitt.

Ready?

Take pot off the stove (maybe into sink, to avoid any accidental messes), add half of the milk and whisk quickly. It will bubble furiously. Keep whisking, and return to stove over a low heat. Add the rest of the milk until you have the desired consistency.

You want a thin sauce.

Now you can get to the kunafa.

Add oil (or melted butter) to kunafa and then use your fingers to “fluff” it, cutting the long strands into shorter pieces.

Press the doughy strands into well greased cupcake molds, then bake in a preheated oven at 200 degrees celsuis until they turn a dark golden colour.

I made an Egyptian milk custard (Muhalabeya) to be the creamy base for the apple filling. It’s incredibly easy and goes perfectly with the kunafa.

Bring milk to the boil with sugar. Dissolve corn starch with a little milk in a seperate bowl then add it to pot. Add vanilla. Whisk mixture over medium heat till it becomes the consistency of a thin custard. Don’t worry, it will thicken a bit more as it cools down.

Peel and cut apples into medium sized cubes and immediately squeeze a lime over them to avoid browning.

Dissolve corn starch in water. Add sugar, cinnamon and vanilla. Stir well and bring mixture to a boil.

Add apples and raisins and simmer until apples are tender.

Now we’re ready to assemble our apple pie kunafa “cup cakes”.

Drizzle with caramel and set aside for five minutes.

This cool spinachy pesto salad is just the kind of This cool spinachy pesto salad is just the kind of lunch that makes me feel closer to vacation when it’s still six weeks away. 

⭐️Can’t-Wait-For-Summer Pasta Salad⭐️
100 grams whole-grain pasta (or legume pasta for an extra boost of protein)
1 bunch baby asparagus, steamed lightly 
1 cup cherry tomatoes, sliced 
1 tsp crushed pistachios, to garnish 

Pesto:
1 cup spinach 
2 cups fresh basil
1/4 cup pistachios, shelled 
Pinch of salt
1-2 cloves garlic, to taste
Olive oil

⭐️Recipe⭐️
1️⃣ Add pesto ingredients except olive oil in a food processor and then slowly mix while drizzling the oil until mixture is nice and smooth. 
2️⃣ Boil pasta until al dente and blast with cold water until it’s cooled down. Mix with sliced cherry tomatoes and steamed asparagus and then add pesto and toss to coat. Sprinkle with crushed pistachios and enjoy!

⭐️ Apple Pie Breakfast Parfait⭐️
1 cup apple cubes
1/2 cup Greek yogurt 
1 tablespoon crunchy granola
Sprinkle of cinnamon
Drizzle of honey
1/4 teaspoon vanilla 
1/4 teaspoon coconut oil, melted (optional)

⭐️Recipe⭐️
1️⃣Mix apple cubes with a little honey, vanilla, and cinnamon (and coconut oil if you choose)
2️⃣Air-fry at 180-200 c until tender and lightly caramelized 
3️⃣Layer apples and yogurt in a glass and top with granola. Enjoy with a little extra honey and cinnamon.

⭐️Ramadan Parfait⭐️

150 grams Greek yogurt 
5-6 dried apricots 
2 TB Ramadan Granola* 
Water
1/2 TB pistachios 

⭐️Recipe⭐️

1- Soak apricots in 1/2 a cup of water until softened.

2- Blend apricots with water until you get a purée. 

3- Layer granola, apricot purée and yogurt into a glass and top with extra chopped pistachios and apricots.

Whole-grain toast
2 tablespoons ricotta cheese
1-2 teaspoons honey
1/4 cup freeze dried strawberries 
Fresh strawberries, blueberries and mint, to garnish 

⭐️Recipe⭐️
1️⃣Pound freeze dried strawberries into powder.
2️⃣Mix ricotta with honey then add strawberry powder. 
3️⃣Spread pink cheese on toast and garnish with fruit and mint.

⭐️Berrylicious Cream Cups⭐️
1 1/4 cups rolled oats
1/4 cup coconut oil or applesauce
1/2 cup Greek yogurt 
1/2 cup mixed berries 
2 TB honey
Cinnamon
Vanilla

⭐️Directions⭐️
1- Mix oats, coconut oil or applesauce, honey and cinnamon. I sometimes give it a little blitz in the food processor. 
2- Grease muffin tins and carefully press a spoonful of the mixture into each mold. You can use the back of a spoon to really mold it into a cup shape. 
3- Bake in a preheated 180c oven for around 15 mins or until crunchy and golden brown.
4- Remove muffin tins and let cool before carefully lifting each “cup” from the mold. It will be very delicate so careful it doesn’t crack.
5- Fill each oat cup with creamy yogurt & vanilla then add a sprinkle of sweet berries.

⭐️Sweet & Sour Marinated Tomatoes⭐️
2 cups cherry tomatoes, halved 
2 tbsp olive oil
1 clove of garlic, minced 
1 lime, juiced
1/4 tsp lime zest
1/2 tsp honey (or to taste)
3/4 tsp salt (or to taste)
Fresh basil or parsley, minced

⭐️Recipe⭐️
1️⃣Mix everything but the tomatoes together. Taste and adjust any ingredients to your taste. 
2️⃣Toss tomatoes with dressing and leave to marinate in the fridge for at least 3 hours. 
3️⃣Enjoy!

⭐️Date & Nut “Snickers” Bites⭐️
5 medjoul dates 
1 small bar of dark chocolate 
1 tablespoon toasted peanuts
2.5 teaspoons peanut butter (1/2 tsp for each date)

⭐️Recipe⭐️
1️⃣Slice into each date just to remove pit. 
2️⃣Add 1/2 tsp of peanut butter into each date.
3️⃣Stuff a few peanuts in there and press to close.
4️⃣Melt dark chocolate and dip each date in until covered in 🍫
5️⃣Refrigerate if it’s hot or leave at a cool room temp to harden and enjoy!

1️⃣Mash the raspberries with a little honey with the back of a fork. 
2️⃣Mix half of the amount of raspberry purée with the cheese and yogurt.
3️⃣Toast bread lightly and then spread pink mixture on top.
4️⃣Swirl in raspberry purée in the pink cheese and garnish with granola or slivered almonds.

These colorful rainbow veggie buns عيش بعجينة الخضروات are as fluffy and delicious as they are pretty to look at 🌈

⭐️ Rainbow Veggie Rolls⭐️
100 grams whole grain flour 
150 grams AP flour
175 grams (carrot juice or beet juice or spinach juice- you’ll need to repeat the same recipe with each and try to use a juicer)
1 TB honey 
1 tsp yeast 
1 dash salt 
1 TB olive oil 
⁣
⭐️Recipe⭐️
1️⃣Mix everything together and knead for ten minutes until a smooth ball forms. 
2️⃣Let rise in a warm place covered until doubled in size.
3️⃣Divide dough into tennis sized balls and arrange on a greased baking sheet with parchment.
4️⃣Cover and let rise again until balls rise. 
5️⃣Brush tops with maple syrup and add sesame seeds if you like. 
6️⃣Bake in a pre heated 180 c oven until done (buns will sound hollow if you tap their bottoms).

This wholesome version is the perfect power breakfast for those days you wake up with a sweet tooth. 

⭐️Sweet Tahini & Molasses Toast⭐️
1 whole-grain piece of toast (thick cut)
1 tablespoon tahini
2-3 teaspoons blackstrap molasses
1-2 teaspoon toasted sesame seeds

⭐️Recipe⭐️
1️⃣Toast bread lightly 

2️⃣Mix tahini and molasses and drizzle on bread.

3️⃣Sprinkle sesame seeds on top and enjoy☀️
