Peach Kunafa

So Ramadan is coming to an end and I kind of dug myself into a hole. I posted a Facebook status saying that kunafa with Nutella is kind of disgusting. And apparently everyone thought that meant I was a kunafa purist. Which I’m totally not. I just think that syrupy kunafa doesn’t go with sickly sweet chocolate goo. Ew.

But kunafa and fresh peaches, now that is another story.

Imagine this; warm slices of peaches with hints of vanilla and cinnamon sandwiched in between two layers of kunafa, topped with whipped cream and drizzled with caramel sauce.

Nothing more to say, is there?

Ingredients:
Peach filling:
1 kilo fresh peaches, peeled and sliced
2 cups water
2 Tablespoons corn starch
I teaspoon sugar
1 Tablespoon vanilla
1 teaspoon cinnamon

Kunafa:
500 grams raw kunafa, fluffed and cut into short strands
1 cup sunflower oil
2 cups thick sugar syrup, chilled

Garnish:
4 cups whipped cream
¾ cup caramel sauce (steps here)

Directions:

Grease your pan and work oil well into kunafa strands. Pat the first kunafa layer into the bottom of the pan, pressing on it until even.

Prepare peach filling by boiling water, corn flour, cinnamon, sugar and vanilla and stirring in peach slices.

Pour mixture on top of the first kunafa layer in the pan.

A little caramel here can’t hurt.

Press in more kunafa on top of the peach filling to create a second layer, creating a kunafa “sandwich”.

Bake in a preheated 220 c oven until the kunafa turns LIGHT golden brown and take it out.

Immediately pour the cold sugar syrup over the hot kunafa while it’s in the pan, drenching it.

Flip it upside down on a serving plate with one quick motion. The bottom (now top) kunafa layer will be a darker golden brown than the other side, which is what you want.

Let the kunafa cool down, then garnish it with the whipped cream and drizzle more caramel on top of it. You won’t be sorry.

⭐️ Honey Garlic Roasted Veggies⭐️
⁣
2 medium potatoes, chopped into cubes
1 large sweet potato, chopped into cubes
1 medium sized head of broccoli, chopped into florets
2 cups cherry tomatoes
4 garlic cloves, finely chopped
1/4 cup olive oil
2 Tablespoons honey
Salt and pepper, to taste
Fresh rosemary and/or thyme sprigs (can be replaced with dry Italian herb mix)

⭐️Directions⭐️
⁣
1- Preheat oven to 220 C and line a large baking sheet with foil (you don’t have to, but it makes cleanup much easier). Spray it with oil and then add potatoes and sweet potatoes.
2- Bake for 15-20 minutes and then take out the tray to add broccoli and tomatoes. Heat the oil gently in a small pan until barely hot. Add garlic, herbs, salt and pepper, and oil to vegetables and mix well. 
3- Drizzle with honey and bake for another 25-30 minutes or until potatoes and sweet potatoes are done.
4- Enjoy!

⭐️ Rainbow Veggie Rolls⭐️
100 grams whole grain flour 
150 grams AP flour
175 grams (carrot juice or beet juice or spinach juice- you’ll need to repeat the same recipe with each and try to use a juicer)
1 TB honey 
1 tsp yeast 
1 dash salt 
1 TB olive oil 
⁣
⭐️Directions⭐️
1- Mix everything together and knead for ten minutes until a smooth ball forms. 
2- Let rise in a warm place covered until doubled in size.
3- Divide dough into tennis sized balls and arrange on a greased baking sheet with parchment.
4- Cover and let rise again until balls rise. 
5- Brush tops with maple syrup and add sesame seeds if you like. 
6- Bake in a pre heated 180 c oven until done (buns will sound hollow if you tap their bottoms).

⭐️Pink Caprese Mini Pizzas⭐️
100 grams whole grain flour
150 grams AP flour
175 grams beetroot purée 
1 TB honey 
1 tsp yeast 
1/2 tsp salt 
1 tsp olive oil 
Walnut pesto
Cherry tomatoes 
Fresh basil leaves
Mozzarella 
⁣
⭐️Directions⭐️
1- Mix flour, beetroot purée, honey, salt yeast and olive oil. Knead for 7-10 minutes.
2- Cover ball of dough and let rise in a warm place for around 1-2 hours (it won’t double in size).
3- Refrigerate for an hour to make it easier to work with. 
4- Roll dough into a large circle around 2 mm thick. Use a cookie cutter to cut out smaller circles.
5- Pre-heat oven to 200 c and then arrange mini dough circles on a baking sheet lined with greased parchment paper. 
6- Top each pizza with walnut pesto, sliced cherry tomato and cheese.
7- Bake until crust is crispy and cheese has melted and garnish with fresh basil.
