Easy Chicken Shawarma

Shawarma. I would truly and honestly prefer to get a chicken shawarma sandwich (or two. Or three.) than a bouquet of exotic flowers any day.

There are several variations of this beautiful, wonderful, perfectly delicious chicken sandwich but my favourite is the Syrian version, largely due to the fact that every Syrian that has ever sold me one of these was an utterly lovely person. It doesn’t hurt that it’s served in a huge, super soft crepe like bread called Saj. If you don’t have access to Saj though, never fear! A flour tortilla would make an excellent substitute.

Anyhoo, enough talking, more eating.

Shall we?

Ingredients:
1 pound chicken breasts

Chicken marinade:
Juice of one lemon
1 medium onion, finely chopped
2 cloves garlic, minced
1 Tablespoon Zaatar blend (substitute oregano or thyme)
Salt and pepper, to taste
1 Tablespoon pomegranate concentrate (substitute sweet soy sauce or oyster sauce)
1 tablespoon plain yogurt (optional)
1 tablespoon oil

Garnish:
1 tablespoon parsley, chopped
1 small tomato, chopped
½ teaspoon oil
½ teaspoon pomegranate concentrate (substitute sweet soy sauce)
Flour tortillas
Garlic mayonnaise
Pickled cucumbers, chopped (substitute jalapenos)

Directions:

I like to marinade my chicken breasts in the baking pan I’m going use. You could totally grill these but I prefer to stick them in the oven and forget about them while I watch Gilmore Girls on Netflix.

Put onions, garlic, lemon juice, pomegranate concentrate (or sweet soy sauce), Zaatar (or thyme), yogurt, oil, and salt and pepper in the baking pan.

Rub chicken with marinade.

Bake in a preheated oven at 200 degrees Celsius until juices run clear and internal temperature is 74 degrees Celcius).

Chicken is done!

When chicken is done it is a good idea to put it in the fridge to cool down because we are going to slice it real thin and cold chicken is definitely easier to slice.

Toss sliced chicken and chopped tomatoes with a teaspoon of oil and pomegranate concentrate (or soy sauce) plus a little parsley for a minute.

Spread a thin layer of garlic mayonnaise on saj bread or tortilla.

Carefully roll it up like so.

If you have a sandwich maker, good for you. If you don’t, get a grill and a heavy bottomed pan. Put the sandwich on the grill and press on top of it with the pan.

Do this on both sides.

⭐️ Honey Garlic Roasted Veggies⭐️
⁣
2 medium potatoes, chopped into cubes
1 large sweet potato, chopped into cubes
1 medium sized head of broccoli, chopped into florets
2 cups cherry tomatoes
4 garlic cloves, finely chopped
1/4 cup olive oil
2 Tablespoons honey
Salt and pepper, to taste
Fresh rosemary and/or thyme sprigs (can be replaced with dry Italian herb mix)

⭐️Directions⭐️
⁣
1- Preheat oven to 220 C and line a large baking sheet with foil (you don’t have to, but it makes cleanup much easier). Spray it with oil and then add potatoes and sweet potatoes.
2- Bake for 15-20 minutes and then take out the tray to add broccoli and tomatoes. Heat the oil gently in a small pan until barely hot. Add garlic, herbs, salt and pepper, and oil to vegetables and mix well. 
3- Drizzle with honey and bake for another 25-30 minutes or until potatoes and sweet potatoes are done.
4- Enjoy!

These colorful rainbow veggies buns are as fluffy and delicious as they are pretty to look at 🌈

⭐️ Rainbow Veggie Rolls⭐️
100 grams whole grain flour 
150 grams AP flour
175 grams (carrot juice or beet juice or spinach juice- you’ll need to repeat the same recipe with each and try to use a juicer)
1 TB honey 
1 tsp yeast 
1 dash salt 
1 TB olive oil 
⁣
⭐️Directions⭐️
1- Mix everything together and knead for ten minutes until a smooth ball forms. 
2- Let rise in a warm place covered until doubled in size.
3- Divide dough into tennis sized balls and arrange on a greased baking sheet with parchment.
4- Cover and let rise again until balls rise. 
5- Brush tops with maple syrup and add sesame seeds if you like. 
6- Bake in a pre heated 180 c oven until done (buns will sound hollow if you tap their bottoms).

⭐️Pink Caprese Mini Pizzas⭐️
100 grams whole grain flour
150 grams AP flour
175 grams beetroot purée 
1 TB honey 
1 tsp yeast 
1/2 tsp salt 
1 tsp olive oil 
Walnut pesto
Cherry tomatoes 
Fresh basil leaves
Mozzarella

⭐️Directions⭐️
1- Mix flour, beetroot purée, honey, salt yeast and olive oil. Knead for 7-10 minutes.
2- Cover ball of dough and let rise in a warm place for around 1-2 hours (it won’t double in size).
3- Refrigerate for an hour to make it easier to work with. 
4- Roll dough into a large circle around 2 mm thick. Use a cookie cutter to cut out smaller circles.
5- Pre-heat oven to 200 c and then arrange mini dough circles on a baking sheet lined with greased parchment paper. 
6- Top each pizza with walnut pesto, sliced cherry tomato and cheese.
7- Bake until crust is crispy and cheese has melted and garnish with fresh basil.
