If you happen to fast Ramadan then you’ll know exactly how much these pistachio chocolate-dipped apricots can hit the spot when you sorely need a sweet something between iftar and sohour.
But that doesn’t mean you can’t enjoy them as a healthy, filling snack all on their delicious own all year round.
They’re also just three ingredients and take all of five minutes to make. So really, what are you waiting for?
Ingredients:
6 dried apricots
2 squares dark chocolate
15 grams pistachios, shelled
Directions:
Grind pistachios to a fine powder-like consistency with a sharp knife or a mortar and pestle.
Melt chocolate (except a small piece) over a water bath. Remove from heat and mix in the last piece until melted in as well.
Dip half of each apricot in melted chocolate and then pistachios. Arrange on wax paper to dry at room temperature.
